Origin :
Why an Apéritif Tariquet? So that our delightfully fresh and lively Côtes de Gascogne wines may also be enjoyed before a meal.

What is Apéritif Tariquet? A blend of grape juice, selected for its high concentration, and a very fine eau-de-vie at its aromatic best.

How is Apéritif Tariquet made? During the wine making process we often found that certain types of grape juice reveal outstanding fruit aromas just as alcoholic fermentation begins. This led us to imagine an aperitif that would combine these aromatic juices with our finest eau-de-vie.


Sélection :
Certain grape varieties, such as Gros Manseng, Chardonnay and Sauvignon, when very ripe, produce a highly concentrated grape juice. Among them, we select those that release the most delicious fruity aromas in the early stages of fermentation. We then interrupt the conversion of sugars to alcohol by blending the juice with Folle Blanche eau-de-vie, selected for its floral tones and finesse.

Production :
Constant attention (both analytical and gustatory) must be paid to the conversion of sugars to alcohol during the production of Apéritif Tariquet. Indeed, experience has shown that maximum aromatic potential is released in the first quarter of the early fermentation stage, which must not be interrupted too soon by the addition of eau-de-vie. Otherwise, an excessively high level of sugars would certainly undermine the crisp and lively flavours that are the hallmark of our aperitif.
